There is always room in my garden for the cultivation of cayenne pepper Capsicum frutescens and its cultivars. This year I tried a cultivar named 'Large Red Thick'. I have more than a year's dried supply from growing six plants. Easy to grow and little bothered by pests I grow cayenne because of its medicinal uses such as reducing cholestrol and triglycerides levels, platelet aggregation, used as a topical for reducing the pain caused by arthritis and because it contains beta carotene, flavonoids, and vitamin C. So much from so little. 'Large Red Thick' was hotter to taste than last year's crop so you don't have to use as much to get the same heat content in food preparation. I use it in chili, salsa, on pizza, and wherever heat is desired in cooking. Bam! The large pepper in this image is a California Wonder green pepper that ripened to a nice red color as all green peppers will if allowed to ripen longer.
