Now stuff them babies! Grab a pepper in your left hand, a tablespoon in your right or vice-versa if you're left-handed. Hold the pepper over the stuffing bowl so you don't mess up the bottom of the pyrex baking dish eh? Stuff the pepper about half way and put in some minced bacon bits from a strip of bacon that you cooked previously. Remember, one strip of cooked bacon per pepper minced to resemble bacon bits. Continue to stuff the pepper to just a little below the top. Finish the pepper with the remainder of the bacon bits from a slice of cooked bacon. Half the bacon bits go in the middle of the pepper the other half of the bacon bits on top. If you don't eat meat, then do what you like with some of your other favorite ingredients that combine well with brown rice and green pepper. Don't be afraid to improvise.
