There are many variations on this theme. I'm using an omnivorous approach with this recipe. I used three cups of long-grain brown rice, one and one half pounds of ground beef sirloin and one strip of bacon per green pepper. If you wish to skip the meat entirely, then add an additional brown rice. In other words cook 4 cups of long-grain brown rice instead of three (3). After cooking the ground beef and brown rice mix them together in a large bowl. Allow to cool enough so that when you handle the stuffing you don't burn your hands. The cooking of the brown rice takes about forty five minutes. When making this recipe cook the brown rice first, then the bacon, then proceed with the blanching and finally the baking. For best nutrient retention, do not rinse the brown rice prior to cooking unless it comes from the supermarket and is full of pesticide residues. Then, by all means rinse the hell out of it. Probably best to purchase your ingredients from a good organic food cooperative or health food store. It's always good to know your food sources.
