I have filled a basket with about a dozen commercial size green and red peppers fresh from the garden. A red pepper is just a green pepper that has been allowed to ripen more fully. A red pepper has a slightly different taste than a green pepper plus having the added benefit of carotenoids which are a highly colored (red, orange, and yellow) group of fat-soluble plant pigments. Fat-soluble. You got that? Eat your many colored veggies! |
