habanero_and_cayenne

This year I wanted to observe whether habanero pepper would dry as well as cayenne pepper. What I discovered was that some of the habanero peppers contained pepper maggot larvae and would cause a drying pepper to rot. Habanero pepper that did not contain the larvae dried as well as cayenne pepper but took a longer amount of time to dehydrate. Most people cannot stand the heat of habanero pepper but I use them sparingly for additional heat in some of my favorite foods. Dried habanero and cayenne peppers can be ground coarsely into small flakes or ground to a powder for food application. I remove any seeds prior to processing and I store the dried powder in tightly sealed glass jars without adding any preservatives.
